Half a tri-tip from Sobeys, seasoned with Maritime Madness Mighty Mesquite, smoked low and slow on the Pit Boss PB150 with hickory & maple pellets, then reverse-seared hot and fast.
Sliced paper-thin on a Starfrit meat slicer, stacked on toasted Vellagio bread with Frenchās mustard and balsamic-fried red onions.
