In this video, Iām making ultra-juicy, melt-in-your-mouth pulled pork using my Pit Boss pellet smoker and bold seasonings from Maritime Madness. This is a super simple, low and slow method that delivers incredible bark, rendered fat, and deep smoky flavor every time.

⢠Pork shoulder / pork butt
⢠Hickory pellets
⢠Maritime Madness Jalapeño Apple Hot Sauce (binder)
⢠Maritime Madness Garden Herb Rub
⢠Maritime Madness Sweet Chipotle Rub
⢠Apple cider vinegar (for spritzing)
⢠Butter (for wrapping)
⢠Aluminum foil
š„ Cooking Method:
1ļøā£ Prep
Start by coating the pork with jalapeƱo apple hot sauce as a binder. Season generously with Garden Herb and Sweet Chipotle rubs, making sure every side is covered.
2ļøā£ Smoking
Preheat your pellet smoker to low and slow temperatures (around 225°F) using hickory pellets. Place the pork on the smoker and cook for about 8 hours.
3ļøā£ Spritzing
Every 30ā45 minutes, lightly spritz the pork with apple cider vinegar. This helps build bark and keeps the surface moist.
4ļøā£ Bark Development
As the pork cooks, the fat renders and the bark forms, creating an incredible texture and deep smoky flavor.
5ļøā£ Wrap & Braise
Once the internal temperature reaches around 180°F, transfer the pork to foil. Add butter, more hot sauce, and Sweet Chipotle seasoning. Wrap tightly.
6ļøā£ Oven Finish
Place the wrapped pork in a 275°F oven and continue cooking until it reaches 203°F internal.
7ļøā£ Resting
Let the pork rest until it cools to about 140°F. This keeps the juices inside and makes shredding easier.
8ļøā£ Shred & Serve
Shred the pork by hand and enjoy insanely tender, juicy pulled pork that literally melts in your mouth.
