Ingredients
• 1 whole chicken
• 1 can Coldstream Clear Nova Scotia Lager @coldstreamclear
• 2 tbsp butter (softened)
• 2–3 tbsp Top Shelf BBQ Seasoning by Beer League Barbecue
• Kingsford charcoal briquettes @Kingsford
• 1 chunk Furtado Farms cherrywood
Instructions
1. Preheat the @NapoleonProducts charcoal grill to 400–425°F using Kingsford charcoal briquettes.
2. While the grill heats up, pat the chicken dry with paper towel. Dry skin helps the chicken crisp up.
3. Rub the chicken with softened butter all over the skin.
4. Season generously with Top Shelf BBQ Seasoning covering the entire chicken.
5. Open the Coldstream Clear Nova Scotia Lager and pour out or drink about a quarter of the can.
6. Carefully place the chicken over the beer can so the chicken sits upright.
7. Add a chunk of Furtado Farms cherrywood to the charcoal to create a light smoky flavour.
8. Place the chicken upright on the grill over indirect heat.
9. Cook for 45 minutes to 1 hour at 400–425°F until the internal temperature of the chicken reaches 165°F in the breast and 175°F in the thighs.
10. Remove the chicken carefully, let it rest for 10 minutes, then carve and enjoy.
