Tri-tip doesn’t always have to be hot and fast. In this cook, it’s taken low and slow and treated like a brisket — and the results speak for themselves.
This tri-tip was seasoned with Café Ember and Buffalo dry rubs by Royal Nova Company, then cooked on an R&R offset smoker using sugar maple wood at a steady 250°F. The goal for this cook was simple: build a deep, flavorful bark while keeping the beef tender and juicy.
After 7–8 hours on the offset, the tri-tip developed an incredible crust. The Café Ember seasoning played a huge role in bark formation, helping create that dark, textured exterior while still letting the beef shine. Inside, the meat was juicy, tender, and packed with smoke and seasoning — very similar to brisket, but with its own personality.
This video walks through:
• Why low & slow works for tri-tip
• How seasoning choice affects bark development
• Cooking tri-tip like a brisket on an offset smoker
• Using sugar maple wood for clean, balanced smoke
• How to get tender, juicy results without drying it out
If you’re looking to level up your bark game or want to try something different with tri-tip, this cook is 100% worth trying.
