This sausage stuffed chicken breast turned out absolutely spectacular.

A fresh chicken breast was picked up from Sobeys and butterflied open to create the perfect pocket for seasoning and stuffing. The inside of the chicken was seasoned generously with Maritime Madness Unreal Pepper Rub and Maritime Madness Garden Herb for a bold, balanced flavour.

A rosemary and garlic sausage from Vessel Meats was removed from its casing and added directly into the centre of the seasoned chicken breast. The chicken was then rolled tightly and secured with butcher’s twine to keep everything locked in.

The outside of the chicken was seasoned again with the same Unreal Pepper Rub and Garden Herb, followed by a glaze of candied cranberry hot sauce for a sweet and tangy finish. The chicken went into the oven at 375°F for 45 minutes until perfectly cooked and juicy.

To finish, the chicken was sliced and plated with roasted sweet potatoes and a barbecue ranch chopped salad. The end result was incredibly tender, flavour-packed, and absolutely delectable.
