Smoked Pork Money Muscle Pizza in a Wood Fired Oven | BBQ Pizza Recipe | SaucyRossyBBQ

Smoked pork and wood fired pizza are a match made in BBQ heaven. In this cook, a pork money muscle is smoked low and slow, sliced thin, and turned into the ultimate pizza topping in a blazing hot wood fired pizza oven.

The cook starts by trimming a pork money muscle into a uniform shape to help it cook evenly. The pork is then seasoned generously with Double Double Coffee Dry Rub from Beer League Barbecue, which brings deep roasted coffee flavor that pairs perfectly with pork.

The pork money muscle goes onto a @PitBossGrills pellet smoker running at 250°F, where it slowly smokes for 5–6 hours until it reaches an internal temperature of 170°F. At that point the pork is wrapped in foil with butter and Earls Signature Sauces Carolina BBQ Sauce to lock in moisture and build flavor.

The wrapped pork is then finished in the oven at 275°F until it hits 203°F internal temperature, which is the sweet spot where pork becomes incredibly tender.

After resting, the pork money muscle is sliced thin using a @starfrit_ meat slicer, creating the perfect BBQ topping for pizza.

From there the real fun begins.

Teaming up with Bradston Pizza, the smoked pork money muscle becomes the star ingredient on a wood fired pizza cooked in a PIAZZA live fire pizza oven. The high heat of the wood fired oven creates a crispy crust while the smoky pork adds rich BBQ flavor to every bite.

The result is a BBQ pizza that combines the best of low and slow barbecue with authentic wood fired pizza cooking.

Smoked pork money muscle might just be the most underrated pizza topping ever.

And honestly… this one was a 10/10.

Full Recipe – Smoked Pork Money Muscle Pizza

Ingredients

Pork
• 1 pork money muscle
• Beer League Barbecue Double Double Coffee Dry Rub
• 2 tbsp butter
• ¼ cup Earls Signature Sauces Carolina BBQ Sauce

Pizza
• Pizza dough
• Pizza sauce
• Mozzarella cheese
• Thin sliced smoked pork money muscle
• Optional toppings: red onion, jalapeños, hot honey drizzle

Step 1 – Trim the Pork

Trim the pork money muscle into a uniform cylindrical shape so it cooks evenly during the smoke.

Step 2 – Season

Coat the pork generously with Double Double Coffee Dry Rub from Beer League Barbecue.
This coffee-based rub gives the pork deep roasted flavor and builds a rich bark during the smoke.

Step 3 – Smoke the Pork

Preheat pellet smoker to 250°F.

Place the pork money muscle on the smoker and cook for 5–6 hours until the internal temperature reaches 170°F.

Step 4 – Wrap

Place the pork on foil and add:
• Butter
• Earls Signature Sauces Carolina BBQ Sauce

Wrap tightly and move to the oven.

Step 5 – Finish Cooking

Cook in the oven at 275°F until the pork reaches 203°F internal temperature.

This is where the connective tissue breaks down and the pork becomes incredibly tender.

Step 6 – Rest

Allow the pork to rest for at least 30 minutes before slicing.

Step 7 – Slice the Pork

Using a Starfrit meat slicer, slice the pork money muscle into thin slices perfect for pizza toppings.

Step 8 – Build the Pizza

Top pizza dough with:
1. Pizza sauce
2. Mozzarella cheese
3. Sliced smoked pork money muscle

Step 9 – Cook the Pizza

Cook the pizza in a wood fired pizza oven such as a LA PIAZZA Live Fire Oven until the crust is crispy and the cheese is bubbling.

Step 10 – Enjoy

Slice and enjoy one of the most flavorful BBQ pizzas ever made.
