This was a special one.
A good friend of mine caught a tuna while sailing back from Bermuda to Canada and saved me a piece to smoke. I took it out to the oceanfront in beautiful Prospect Bay, Nova Scotia, and fired up my Pit Boss pellet grill for a low and slow cook.
I seasoned the tuna with Heath Riles Garlic Butter Dry Rub and smoked it gently until it reached an internal temp of 120°F. Once it was off the grill, I gave it a dip in Spicy Boys OG Hot Sauce for that perfect fiery finish.
The result? Tender, juicy, and absolutely packed with flavor — smoky, buttery, with a bold heat kick. This is one of those cooks that just hits different, especially when you’re grilling oceanside with the breeze rolling in.
If you’ve never smoked tuna before, this is your sign to give it a go.
