Fresh dill and lemon slices are stuffed inside the trout, and the outside is lightly brushed with olive oil.
The trout is grilled on a Napoleon charcoal grill using Kingsford charcoal briquettes, set up for two-zone cooking. It’s started over direct heat, rotated halfway through, then finished gently on indirect heat until it reaches 145°F internal. The skin peels away clean and easy, leaving moist, tender, smoke-kissed fish that’s naturally rich and incredibly refreshing.
